75g Clonakilty Blackpudding
50g cured bacon lardons
30g cherry tomatoes
15g sliced cucumber
10g sliced red onion
50g oriental mixed baby leaf
20g balsamic vinegar
20g olive oil
- Fry the bacon lardons and black pudding in oil until crispy.
- Mix the cherry tomatoes, cucumber, red onion, mixed baby leaf, balsamic vinegar and olive oil together in a large bowl.
- Add the black pudding and the bacon lardons, stirring all ingredients well. Serve while hot.
